Pumpkin Bread Recipe


This week we've made a couple batches of pumpkin bread. There is nothing like the smell & taste of cinnamon, cloves & nutmeg to put you in the perfect autumn mood. :) Here is the recipe I always use...
Pumpkin Bread

3 c. sugar
1 c. oil
3 eggs
2 cups cooked pumpkin (ummm...I use canned pumpkin)
3 c. flour
1/2 tsp salt
1/2 tsp baking powder
1 tsp baking soda
1 tsp ground cloves
1 tsp ground cinnamon
1 tsp ground nutmeg
1 c. nuts, optional (I don't like nuts in my breads - but you might)

Cream together sugar, oil & eggs. Add all other ingredients & mix.
Put in large greased loaf pan [OR a Bundt pan] at 325 degrees
for 60 minutes or until toothpick comes out clean.

I also have a Pumpkin Cheesecake recipe that is to DIE for... it's so good that both non-pumpkin
people & non-cheesecake people (such as myself) BOTH LOVE IT. :) So I'll post that soon before we all
make our Thanksgiving Menus! ENJOY!!!!
