I'm Cheating on my Salsa ...



For over 9 years I've made another recipe {click here}. And it's good. So good. Like I've-made-it-for-9 years good.

But. 4th of July weekend I had a salsa that beat mine. [Not really mine, it's from a cookbook.] So I asked Kyle's cousin what she put in hers. She rattled off all the ingredients & it was basically what I put in "mine". But 1 major difference ... cumin & the introduction of the food processor. I loved that it was minced. So since my food processor / blender has a new lease on life {click here & here to read that captivating tale} I busted it out for the salsa. I've made it twice in 2 days. We have a new favorite. I had a "Girls' Night" [aka pseudo Quilting Party] last night & I had some ladies request the recipe. Recipe follows ... but you can tweak it to make it your own:

16 oz. diced tomatoes, drained
10 oz can Rotel diced tomatoes with green chiles, drained
handful of cilantro [1/2 cup, loosely packed?]
1/4 cup jalapeƱos
1/4 - 1/2 cup of onion
1 T minced garlic
1 T lime juice
1/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. cumin

Throw it all in the food processor. Repeat approximately once a week [or every 2 days like we do]. And seriously ... this recipe is so forgiving. Add a little less & a little more of something to make it your own. In fact, today we had a couple ripe cherry tomatoes & we threw them in just for kicks. :)
